For more than three decades, Chef Mario Pagán has elevated the Island’s culinary heritage on the world stage — pairing Latin and Caribbean flavors with modern technique, and bringing a distinct sense of place, creativity, and cultural pride to every concept he develops.

His Story

Rooted in the Island’s kitchens

Born and raised in Puerto Rico, Chef Mario’s love of food began early, watching the women in his family prepare Caribbean meals that nourished both body and soul. He moved to Miami to study architecture, but soon chose his true passion. After graduating from Johnson & Wales University, he trained under renowned chefs Carmen González, Pascal Oudin, Norman Van Aken, and his mentor Alfredo Ayala, founder of Chayote Restaurant and a pioneer of modern Puerto Rican cuisine.

His philosophy centers on respecting ingredients, supporting sustainability, and strengthening Puerto Rico’s food system — as a committed advocate for local farmers, fishers, and producers. Mario Pagán Catering brings that same discipline and warmth to every event, islandwide and beyond.
